Once I break the rabbit down, I wash then dry it. Shake it together with seasoned flour in a one-gallon freezer bag. Brown both sides in a cast-iron skillet in extra-virgin olive oil. Remove. Make a gravy using pan drippings. Add rabbit back, cover, and simmer for about an hour. Meat falls off the bone!

Serve with mashed potatoes, biscuits, and vegetable of your choice. I like green beans or butterbeans.
