Replacing original finish?

I have been working in restoring a Israeli stock...I removed the old finish,steamed out all the dents and dings,and lightly sanded it.
I tried to stain and seal with minwax golden olk...comes out brown,
I striped it and tried clear poly. ...still comes out light brown.
What can I use to replace the original light yellowish color

I'm not sure how much he's on anymore but the resident expert on the woods around here for a LONG time is member Blue Monster. Might try messaging him. He used to make replacement furniture, including the original izzy stuff in beech. FYI that wood is difficult to work with. According to BM (Rich) it was a beeswax finish, which I"m not really sure how you'd replicate other than your attempts at a similar stain and satin finish.
