I have a mixmaster USGI M1 Carbine I came into a few years back. Sometime during its life, the bolt assembly was chromed and the rest of the gun polished and blued.

I would like to take it back to parkerizing. Will bead blasting remove the chrome, or do I need to reverse the process somehow? The bluing will be removed with a beadblast, correct?

Chrome plating can be removed.
I would start by contacting companies that chrome plate metal. They have a process to remove it too. At least we do at the company where I work.
The metal underneath should not be affected by the process either.

I wonder what headspacing would be with the chromed bolt face. Or was face not chromed?

And I blasted chrome off of Harley parts. It's not hard chrome, but it is high quality chrome. It came off with glass bead and not with ridiculous pressure either. I'll bet you could blast it off. It's a mixmaster anyhow so the absolute worst case is you replace the bolt, and I don't think you'll need to.
