I have a Inch FAL and I am frustrated with lack of parts and stock sets. Does anyone else make Inch stock sets and p-grips? I would like a ergo grip or saw grip?

You can do what I did. I disassembled my L1A1 that was on an Imbel receiver, got rid of the parts as a kit and built a metric rifle on the receiver. No more parts problems, all kinds of available options and the rifle runs like a scalded cat. The rifle does retain the inch charging handle and mag release.

I guess I could just use a Met lower but do I use all met parts in the lower and will it work in the inch upper?

Yes the receiver will work with metric lower and the mags will work also. Does yours take metric or inch mags now?

You will need a metric HTS set (hammer, trigger, sear) including pins, locking plate, safety and hammer spring assy in a metric lower receiver.
The take down assy will work in both inch and metric lower receivers however.

Bolt and carrier are interchangeable. You can swap them out without a problem although the consensus on this board is to have the headspace checked after changing either B or BC.
It's better to be safe than sorry is the adage when changing B's and BC's.
Rear site will be different and will need addressing. The inch sight is higher.

Just use the metric lower that comes with any kit you buy. You will need to make sure you have the proper number of 922r parts. Everything in the lower can be R&R'd without a problem. There was nothing else to change as everything metric plugs right in. The only part I changed was the charging handle. I replaced the original, which went with the kit, with a US made folding handle. I retained the inch mag release becaue I prefer it, but could have used a metric just as well. Too bad about the mags, inch mags are getting hard to find especially good ones, but most metric mags will work, but make sure they lock up tight or you may have feed problems. You won't need a breeching washer with a metric barrel. Use the search feature and you can find just about everything you need to know and some things you don't.
Or as SIG552 suggested you can simply change lowers. Check the Market Place here on the files or Gun Broker.
