Chicken livers
Piece of plywood
Anise oil
Spatula or putty knife
Non-iodized salt.
Seperate chicken livers into smaller chunks, the size of poker chips preferably.
Spread the chunks onto a piece of plywood, whereas no chunks are touching each other. Sprinkle heavily with the salt, add a drop or two of anise oil to chunks and tilt plywood for draining to start. Remember to place plywood in an area where it will be well vented and sunlight will dry the chunks out.
Let chunks sit for a couple of days and flip with spatula or putty knife when the tops have a texture of leather. Repeat the salting and anise oil treatment. Let sit for a couple more days until chunks have shrunk and dried but are still somewhat plyable.
Use on a Kale hook, threading the chunk on.
